Gnocchi zuzubereiten ist meines Erachtens eine Kunst. Was weitl\u00e4ufig als Gnocchi bekannt ist, kommt leider als z\u00e4he Klumpen auf die Teller. Sie m\u00fcssen aber zart und fluffig sein, erst dann sind sie ein Genu\u00df. Bei den klassischen Kartoffelgnocchi heisst das: nur nicht zu viel kneten. Ricotta-Gnocchi sind fragile Gesch\u00f6pfe, sie neigen genau wie Grie\u00dfnocken im Wasser zu zerfallen. Um diesem Problem zu entkommen habe ich die Gnocchi im Dampf gegart – einfacher und sicherer geht\u00b4s nicht.<\/p>\n

Eine Handvoll Parmesan dazugeben und mit Muskatnuss, Salz und Pfeffer w\u00fcrzen.<\/figcaption><\/figure>\n

Und dann nur ca. 1 Handvoll Griess dazugeben (ich habe diesmal Weichweizengriess genommen, da ich keinen Hartweizen mehr hatte).\u00a0 Achtung der Griess quillt nach -> je weniger Griess man benutzt, umso fluffiger werden sie. Ich muss leider zugeben, dass ich auch weniger h\u00e4tte nehmen k\u00f6nnen, daher gibt es keine genaue Grammeinheit! Immer nach der Devise „Mutig sein“!<\/figcaption><\/figure>\n
